Hazard Analysis Critical Control Point is an internationally recognised food safety methodology which provides the framework for hazard identification and control. HACCP can be used not only within the foodindustry but also in any other industry, for example the healthcare industry,where risk ( hazard) needs to be managed or as a means to reduce high levelsof regulatory inspection.
The ISO 9000 standards (Quality Assurance) provide anexcellent framework for the inclusion of the HACCP principles and an ongoingbasis for continual improvement. The HACCP monitoring, corrective action,recording keeping and verification requirements are already contained withinISO 9001 (or 9002). Adding hazard analysis and CCP to the quality systemis relatively simple.

The first step by Kem is to help identify "critical control points" (CPP) in the production process and assist the customer in establishingproduct selection to meet critical limits. CCP’s are those where the failureof the process would cause or contribute to the occurrence of a hazard.The key is to identify the important control issues and include these inthe system. Critical limits are then established for each CCP. These limits may be determined by Government regulation and are used to establish that the HACCP system is working correctly.
